Chicken Scarpariello

This class is dedicated to my late father, Giovanni Belluardo, who was born in Pachino, Sicily, and whose family profession was that of a Scarpariello (Shoemaker).

Chicken Scarpariello, also known as Shoemaker's Chicken, is a traditional Italian-American dish. It is rumored to have originated in Boston's North End.. It features organic chicken thighs, savory sausage, vibrant red bell peppers, and tangy vinegar peppers. Renowned for its rich flavors, the dish starts with marinating chicken in olive oil, garlic, and herbs creating a comforting, one-pot meal ideal for family gatherings.

We will serve this exquisite dish with freshly prepared pappardelle, a wide and flat pasta made from high-quality Italian 00 flour. This finely milled flour gives the pasta a delicate yet sturdy texture. The 00 flour ensures a silky dough that rolls out to the perfect thickness, capturing the sauce beautifully.
