About the class
Cannoli, an iconic dessert from Sicily, Italy, consists of a crunchy, fried pastry shell filled with creamy ricotta cheese. This delightful mix of textures and flavors is cherished by dessert enthusiasts. We will create the perfect cannoli beginning with the shells, crafted from flour, sugar, salt, vinegar and a little Marsala to ensure the shells “bubble” when fried. The dough is rolled thin, wrapped around metal tubes, and deep-fried to achieve a golden, crispy texture.
The filling is made with fresh ricotta cheese, which is strained for thickness, sweetened with powdered sugar, and enhanced with vanilla. For an authentic touch, we will dust the cannoli with powdered sugar before serving, and optionally, add a drizzle of chocolate or sprinkle with chopped pistachios. NOTE: Each class member will be able to take home a few to share with their family.
